For all you lovely ladies who have husbands/boyfriends who work and go to school full time. I'm sure you were just as happy as i was for today. Veterans day = No School!! Lets us all shout Hooray!! I love these kind of holidays were i actually get to spend the evening with my husband. School likes to keep him until ten at night. Which leaves me to find things to do alone...sometimes. But not tonight :)
Tonight, i enjoyed him & some of my famous strawberry pie!
Out of all the things i bake, this one takes the lead for first place deliciousness.
Fresh Strawberry Pie
1 qt. strawberries, halved
3/4 cup sugar
pinch of salt
3level tablespoons corn starch
1 cup boiling water
2 tablespoons strawberry jell-o
2 teaspoons butter/marg.
1 baked pie shell
Mix sugar, corn starch, salt, and boiling water. Let come to a boil and cook 2 minutes. Stirring constantly. Add few drops of red food coloring. When boiled 2 minutes, remove from stove and add butter and Jell-O. Stir well and let cool. Mix berries with Jell-o and pour in baked pie shell. Top with whipped cream. Chill in refrigerator.
